Cauliflower soup with lemon olive oil - Recipe

1 cauliflower chopped into small pieces, approx 700 g
700 ml water
3 tbsp concentrated chicken stock
300 ml Oatly Enriched or Organic oat drink
Salt and ground white pepper
1-2 tbsp olive oil flavoured with lemon
Sprigs of thyme to garnish

Ham and pesto bites:
4 slices wholemeal bread
8 thin slices smoked ham
2 tbsp pesto
2-3 tbsp olive oil


1. Place the cauliflower pieces in a saucepan with the water and stock. Bring to simmer, cover the pan and cook for 10-15 minutes until soft. Cool a little then transfer to a food processor or blender and blend until smooth.

2. Return the soup to a clean pan then add the Oatly Oat Drink, season and re-heat.

3. Stir in a swirl of lemon olive oil and garnish with thyme leaves before serving.

4. To make the ham and pesto bites, spread the pesto on the bread and make sandwiches with the ham. Fry them quickly on both sides in the olive oil.  Cut into fingers and serve.

Chef's tips

If the soup is too thick, you can thin it down with more Oatly oat drink. For special occasions, use truffle oil instead of the lemon olive oil.
