
Ingredients:
- 2kg potatoes
- 1 onion
- 200ml milk
- 200ml stock
- butter
Method:
- Peel and slice potatoes into thinnish slices. Cut the onion in half and slice finely.
- Butter the bottom and sides of your baking tray or dish and place a layer of potatoes over the bottom. Place a layer of onion over the top and sprinkle with salt and pepper.
- Repeat this process including a bit of salt and pepper on each layer until you've used up all the potato and onion.
- Pour over the stock and milk, place a few knobs of butter on top and put in the oven for around 45 minutes.
- Cook's tip: for extra flavour place 2-3 bay leaves on the first layer of potatoes OR grate a bit of nutmeg on the first 2 layers of potato
- Serve with roast lamb and seasonal veg.
