This is a truly delicious starter that looks wonderfully impressive. If you want to save time, then you can easily replace the roasted tomatoes with bought sunblush tomatoes.

Ingredients
12 cherry tomatoes1 clove of garlic, peeled and crushed
olive oil
sea salt and freshly ground black pepper
2 balls of mozzarella, preferably buffalo
8 basil leaves
8 slices of parma ham
1 bag (approx. 50g) rocket leaves
balsamic vinegar
extra virgin olive oil
Method
Pre-heat the oven to 160C/140C fan/gas mark 3
1. Slice the cherry tomatoes in half and place cut side up on a baking tray. Add a little of the crushed garlic on top of each one, and then season with salt and pepper. Drizzle with a little olive oil and place in the oven for 20 minutes to slowly roast.
2. Cut both of the mozzarella balls into quarters, giving you 8 pieces in total. Season with salt and pepper. Place a piece of mozzarella and basil leaf on top of a slice of Parma ham and roll up. Continue with the remaining pieces of mozzarella, basil leaves and slices of Parma ham
3. Heat a tablespoon of olive oil in a frying pan. Add the Parma wrapped mozzarella and fry for about 5 minutes, turning occasionally, until they are becoming golden all over and the cheese is beginning to melt inside.
4. Divide the rocket between 4 plates and arrange the roasted cherry tomatoes around the outside. Drizzle a little balsamic vinegar and extra virgin olive oil over the top and finally finish by placing two pieces of Parma wrapped mozzarella on top of each pile of rocket.
