Ingredients
440g Dry Mashed Potato2 small eggs
2 dessert spoon flour
160g Feta Cheese
100g Pea Shoots (2 bags)
2 tbsp Olive oil
1 small knob of butter
Salt and Pepper
Mint dip
4 tbsp Créme Fraiche
2 tbsp Chopped Mint
1 tbsp Honey
2 tbsp Lemon Juice
Method

Cut the Feta cheese into half centimetre cubes and chop the pea shoots roughly stirring both into the potato mix.
Heat the oil and butter in a non stick frying pan.
Place heaped teaspoons of the mixture into the frying pan, pressing down gently until they are flat.
Fry for 4 minutes on each side until golden brown.
To make the dip combine the cr¨me fraiche, honey, mint and lemon juice
Serve with a crisp green salad.
