Makes 8
Ingredients:
- 8 Wholegrain Krisprolls
- 4 medium hen's eggs or 8 quail's eggs
- 4 teaspoons horseradish sauce
- 4 teaspoons snipped chives
- Salt and pepper to season
- 30g(11/4 oz) unsalted butter
- 225g(8oz) thinly sliced smoked salmon
- lemon wedges
- watercress for garnish
Method:
- Pre-heat the grill and warm the Krisprolls under a low heat. Meanwhile, lightly beat the eggs, folding in the horseradish and chives, season with salt and pepper.
- Melt the butter in a non-stick frying pan, then pour in the eggs. With a wooden spoon, draw the edges of the egg into the centre continuously until the eggs have cooked to your liking.
- Roll the cooked egg in individual strips of smoked salmon and gently place these on top of the Krisprolls.
- Squeeze on some fresh lemon juice and serve immediately, with the remaining lemon wedges and watercress.
