Christmas recipes: Smoked salmon rolls



Makes 8

Ingredients:
  • 8 Wholegrain Krisprolls
  • 4 medium hen's eggs or 8 quail's eggs
  • 4 teaspoons horseradish sauce
  • 4 teaspoons snipped chives
  • Salt and pepper to season
  • 30g(11/4 oz) unsalted butter
  • 225g(8oz) thinly sliced smoked salmon
  • lemon wedges
  • watercress for garnish

Method:
  • Pre-heat the grill and warm the Krisprolls under a low heat. Meanwhile, lightly beat the eggs, folding in the horseradish and chives, season with salt and pepper.
  • Melt the butter in a non-stick frying pan, then pour in the eggs. With a wooden spoon, draw the edges of the egg into the centre continuously until the eggs have cooked to your liking.
  • Roll the cooked egg in individual strips of smoked salmon and gently place these on top of the Krisprolls.
  • Squeeze on some fresh lemon juice and serve immediately, with the remaining lemon wedges and watercress.
